Date Night Oomite Carbonara

Where are my carbonara lovers at? I know you're out there and I know you're ready for a twist on this lusciously creamy classic. Enter: Oomite. The Oomite Story

The seed for Oomite was planted back in 2017, when my friend Katie Graham and Magdalena Roze both had the idea of making a 100% natural mitey spread packed with real ingredients and amazing flavour, and they both told Darren (Mag’s chef partner Darren Robertson) about it. They didn’t know each other then, so Daz connected them together and they decided to collaborate!

After almost two years of recipe testing (it's not that easy to make an all-natural, umami-packed, thick spread!), and many many loaves of sourdough and cultured butter, they made something they found delicious and addictive. Using premium, real ingredients was a given, but it was equally important for the talented ladies to get that mitey flavour. To be sure, they began testing it on chef mates, and when they began begging Katie and Mag's for more, they knew that it’s time to hit go! Hello Oomite! 

Their batches are small and hand-filled, and one of their ingredients is a very slow-fermented organic miso. Thankfully, Oomite is now available thanks to a partnership with Pepe Saya - their first retail product! Imagine the perfect amount of umami and tasty Oomite marbled through Pepe Saya butter - it's a match made in heaven. And finally we can all enjoy Oomite at home! I recently picked up some of their Oomite x Pepe Saya butter and needless to say, I knew I wanted to create something special.
