Recipe: Make these delicious plant-based fruity summer Ice Pops

I have been SO EXCITED to share this recipe with you - our deliciously fruity Summer Ice Pops. Like every other kid on Planet Earth, Dusty loves ice-cream. He’s so obsessed with it that we’ve had to abbreviate it to “I.C” (original huh?) when we talk about ice-cream in front of him, otherwise it’ll set him off and he’ll want to eat ice-cream for the REST OF THE WEEK.

Whilst heading out to our locals or grabbing some ice-cream from the fridge is so so good, I wanted to be able to make something a little healthier for Dusty. So, I set about making Dusty some plant-based yummy fruity Ice Pops. They are so easy to make and take next to no ingredients!!

To make these easy, healthy and super delicious Ice Pops - Strawberry & Lime, Pineapple & Mint, Coconut Yoghurt & Blackberry - read on. You’ll notice that other than the fruit and yoghurt, the recipes and method are all the same. Even better!

Strawberry & Lime

Ingredients

  • 4 Cups of fresh or frozen strawberries
  • ¼ Cup coconut sugar
  • ½ Cup water
  • Juice of one lime

 

Method

  1. Combine the strawberries, water and sugar (you can add more if you want your ice pops to be sweeter) in a saucepan over medium heat. Simmer until the sugar dissolves and the fruit is slightly softened, this can take around 5 minutes or sometimes longer if you’re using frozen strawberries. Transfer the mixture into a bowl and place in the fridge to cool down for 15 minutes.
  2. Place the mixture into a blender or food processor, add the lime juice (we like lots!) and blend or puree until smooth; or you can leave some fruity chunks if you like.
  3. Pour the mixture evenly into your ice pop moulds and place in the freezer overnight. We find putting the moulds on the top shelf of the freezer with nothing around it and not opening the freezer helps the ice pops freeze faster, sometimes it only takes 4-6 hours! It also depends on how much sugar you use. Just have fun!

 

 

Pineapple & Mint

Ingredients

  • 4 Cups of chopped pineapple
  • ¼ Cup coconut sugar
  • ½ Cup water
  • Handful of fresh mint
  • Juice of one lemon

 

 Method

  1. Combine the pineapple, water and sugar (you can add more if you want your ice pops to be sweeter) in a saucepan over medium heat. Simmer until the sugar dissolves and the fruit is slightly softened, this can take around 5 minutes or sometimes longer if you’re using frozen strawberries. Coconut Yoghurt & Blackberry

Ingredients

  • 2 Cups of coconut yoghurt
  • 2 Cups of fresh or frozen blackberries
  • ¼ Cup coconut sugar
  • ½ Cup water

 

  1. Combine the blackberries, water and sugar (you can add more if you want your ice pops to be sweeter) in a saucepan over medium heat. Simmer until they are slightly softened, this can take around 5 minutes or sometimes if you’re using frozen strawberries. Transfer the mixture into a bowl and place in the fridge to cool down for 15 minutes.
  2. Place the mixture into a blender or food processor and blend or puree until smooth; or you can leave some fruity chunks if you like.
  3. Pour the coconut yoghurt into the moulds till they are ¾ full. Then pour the blackberry mixture on top and place in the freezer overnight. We find putting the moulds on the top shelf of the freezer with nothing around it and not opening the freezer helps the ice pops freeze faster, sometimes it only takes 4-6 hours! It also depends on how much sugar you use. Just have fun!
